Sato - New Vintage Released

 Sato Wines from Central Otago, NZ, have been riding a wave of popularity lately, with a skyrocketing demand. Personally, I've fallen head over heels for these wines, finding myself reaching for them time and time again. They offer a range of low-intervention, biodynamic wines, with their La Ferme de Sato series crafted from grapes grown in their own vineyards. Their production is limited, with just one bottle remaining of their inaugural 'Les Violettes' Pinot Noir—a testament to their sought-after status.

Each sip of Sato wine feels like a treasure, boasting flavours that are simply irresistible. One standout for me is the La Ferme de Sato Chardonnay, with its beautifully silky texture and a judicious hint of oak that never overpowers. Another gem is the Chenin Blanc, a rare find from the Central Otago region, bursting with sharp fruit characteristics that intrigue the palate.

Their Pinot Noirs are nothing short of spectacular, each expressing its own unique personality. Take, for example, the Banockburn Pinot Noir—a departure from the norm with its abundance of red fruit flavors and a lighter body that's incredibly easy to savour, both in the present and with age. And then there's the pièce de résistance, Les Violettes, a high-end Pinot Noir boasting a firm structure and solid tannins that promise a remarkable aging potential.

But perhaps my ultimate favourite is the Sur Les Nuages Pinot Noir, which effortlessly balances elegant red fruit notes with a powerful body and tannic presence. It's the kind of wine that evolves beautifully in the bottle over the years, promising even greater depths of flavor with time.

For those seeking something a little different, Sato offers skin-contacted Pinot Gris and Riesling that are both refreshing and impeccably crafted, boasting a delightful concentration of fruit flavours.
